Mel adds chocolate chips to her recipe for a gooey decadent finish!

This is my go-to banana loaf recipe, quick and easy, thanks to Jess Daniell from Jess’ Underground Kitchen. Sometimes I sprinkle choc chips on the top before I bake it. YUM. -Mel

Ingredients:

125g butter

1 cup sugar

2 eggs

4 bananas, roughly mashed

½ tsp vanilla extract

1 ½ cups flour

1 tsp baking soda

½ tsp salt

 

Method

Preheat your oven to 160c. Line a loaf tin with baking paper.

Cream butter and sugar. Add eggs, one by one, and mashed bananas, mixing well to combine. Add vanilla.

In another bowl, add flour, baking soda and salt, whisking together lightly to mix. Add to creamed mixture and fold together.

This is when you can add in a handful of choccy chips if you want!

Pour into a lined tin.

Bake for around 60 mins, until a skewer inserted into the middle of the loaf, comes out clean.

Cool for 10 mins before taking out of the tin and serve warm!

I recommend making a few at once because trust me, one loaf won't last long! - Mel
